For the Shrimp:
1 lb large shrimp, peeled and deveined
2 tbsp olive oil
1 tsp chili powder
½ tsp cumin
¼ tsp smoked paprika
Salt and freshly ground black pepper to taste
½ cup Burnt Orange Salsa
For the Avocado Crema:
1 ripe avocado, pitted and scooped
¼ cup sour cream or Greek yogurt
2 tbsp lime juice
2 tbsp fresh cilantro, chopped
1 small garlic clove, minced (optional)
Salt to taste
For Assembly:
8-12 small corn or flour tortillas
Optional toppings: shredded cabbage, pickled red onions, fresh cilantro, sliced radishes, extra Burnt Orange Salsa, lime wedges
Prepare the Shrimp: In a medium bowl, toss the peeled and deveined shrimp with olive oil, chili powder, cumin, smoked paprika, salt, and pepper until evenly coated.
Cook the Shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, or until pink and opaque.
